Lettuce Sauce Recipe
Here is the Lettuce Sauce recipe Chef Back demonstrated last weekend. Enjoy!
1 egg yolk
1 head butterhead lettuce
1.5 teaspoons rinsed capers
1 split lemon
1 tablespoon chopped parsley
1 tablespoon chopped shallot
.5 C olive oil
In the work bowl of your food processor, combine egg yolk, lettuce, juice of the lemon,parsley and shallots.
Process until smoothed. While the machine is still running slowly add your oil so it will thicken. Season and chill.
This is a great addition to grilled or smoked salmon or as a dressing on asparagus.
