Make Your Own Mayonnaise
Your farmers market has the key to fantastic, homemade mayonnaise.
The secret? Fresh farm eggs!
Mayonnaise is the base of many great sauces including green goddess.
Substitute melted butter for the oil and you have hollandaise.
Mayonnaise makes the perfect condiment for fresh market produce and breads.
For those new to the south, you simply must try a tomato sandwich made
from artisan white bread, lush tomatoes, and homemade mayonnaise!
(Watch for local tomatoes in late June or early July.)
Here is a great, 3-ingredient recipe for homemade deep yellow mayo:
- Farm fresh eggs
- The juice of one lemon
- 1 cup olive oil
- A pinch of salt
Add egg yolk, salt and lemon juice to a bowl and whisk for 1 minute.
Start slowly adding oil to emulsify. If the mixture gets too thick don’t worry
just add a tiny bit of water.
