Eggplant Parmesan Deconstructed
INGREDIENTS
1 large eggplant sliced into 1/4-inch-thick rounds
¾ teaspoon kosher salt, more to taste
Black pepper to taste
About 3/4 cup extra virgin olive oil, more for drizzling
5 garlic cloves
4 cups cherry tomatoes, halved
4 sprigs oregano
3 sprigs basil, plus 5 large leaves
5 tablespoons finely grated Parmesan
¼ cup panko bread crumbs
⅓ cup ricotta
2 ounces fresh mozzarella

Habanero Peach Jam
Habanero Peach Jam
4 1/2 pint jars
1 lb 5 oz peeled and pitted peaches
2 habanero peppers, seeds and all, finely minced
1 lb 5 oz sugar
juice of 1 lemon
Put your jars through the hot cycle of the dishwasher to clean. You can reuse the glass jars, but always purchase new lids for each new batch of jam. This is to ensure that they seal properly. (They sell extra lids right next to the jars in the grocery store.)
Peel and slice your peaches over a bowl, to catch the juices.
Weigh the peaches and then weigh out the same amount of sugar.

Peach Freeze
Did you know you can freeze peaches whole?
Just wash them, let them dry, and place them on a tray whole WITH the skins in the freezer. Once they are frozen, put them into freezer bags. Take out one as you need it.
While still frozen, you can easily run your hands over the skin under water to remove it (if you want). Then let sit until thawed. Easier than canning and more of the nutrients are preserved.
Pie Challenge Finals Saturday
Winning pie bakers from six area farmers markets meet for a showdown Saturday at the Woodstock Farmers Market, located on Market Street downtown. Chef Judges are Tony Pisconeri of Pisconeri Studios in Jasper, Daniel Porubianski of Century House Tavern in Woodstock and Brian Jones of Restaurant Eugene in Atlanta.
Judging will begin at 9:30. A Pie Eating Contest for kids will take place at 10:30. Once judges have completed their reviews the pies will be available for the market visitors to taste and vote for the "People's Choice" winner.
